Pumpkin Chocolate Chip Muffins


I love to make these in the Fall time! They are a delicious treat for breakfast or just for a snack. You can also use mini-chocolate chips to make mini muffins, which is always a hit with children.




Pumpkin Chocolate Chip Muffins
1 2/3 Cups Flour
1 Cup Sugar (I've used Splenda before and you cannot tell a difference)
1 tsp. pumpkin pie spice
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
2 large eggs
1 Cup canned pumpkin
1/2 Cup melted butter
1 Cup chocolate chips



Mix flour, sugar, spices, baking soda and powder and salt in large bowl. Beat together eggs, pumpkin and butter. Pour over dry ingredients and mix until moistened. Add chocolate chips and spoon batter into greased muffin tins. Bake at 350 for 20-25 minutes.

I just told Ben that I needed this recipe from you. I remember them as one of our first Hoover Sunday School snacks. I'm not a pumpkin fan, but these are perfect for the season!

Now, this is a recipe that calls for pumpkin and actually tastes good. Not pasta! :) This is my favorite fall treat in the morning. I'm making these this weekend when Amy comes to visit! Another tip, these are extra good served with plain cream cheese.
