Amish Apple Nut Cake

This recipe is similar to the Apple Spice Cake that Donna posted a few days ago. The difference is that this cake is baked in a 9x13 baking dish and it has a yummy topping.

I found it out of an Amish recipe book. I switch back and forth between the recipe that Donna posted and this one. It depends on how much caloric intake I am looking for. This one has more!

Oh, and this cake is good warm, room temp, or right out of the fridge.

1 1/4 cup oil
2 cup sugar
3 eggs
3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 cups cubed apples
1 cup chopped pecans

In a mixer, mix the wet ingredients together. In a separate bowl mix dry ingredients together. Then mix both together in the mixer. Add apples and nuts. Pour in a greased 9x13 baking dish. Place in COLD oven. Then turn oven on 350 and bake for 40-50 minutes, or until a toothpick comes out clean.

Topping:
1 stick butter
1/4 cup evaporated milk
1 cup brown sugar

Put these in a pot on the stove and bring to boil for about 1 minute or so. Pour over warm cake. Allow to cool.
