Simply Delicious Strawberry Cake

I made this today and it is so yummy. Mitchell and I together have eaten about 1/2 the cake already.

1 box white cake mix
1 3-ounce box of strawberry gelatin
1 10-ounce frozen box of strawberrys in syrup, thawed and pureed
4 large eggs
1/2 cup veg oil
1/4 cup water

Preheat oven to 350. Grease 2 9-inch round cake pans.
Combine cake mix and gelatin. Add pureed stawberries, eggs, oil, and water; beat at medium speed with mixer until smooth. Pour into prepared pans and bake for 20 minutes or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes, moving to wire racks to cool completely. Spread Strawberry Cream Cheese Frosting in between layers and on top and sides of cake.

Strawberry Cream Cheese Frosting (Sooo good!)

1/4 cup butter, softened
1 8-ounce cream cheese, softened
1 10-ounce pkge frozen strawberries, thawed and pureed
1/2 tsp strawberry extract
7 cups of confectioners' sugar

Beat butter and cream cheese at med speed with mixer until creamy. Beat in 1/4 cup of strawberry puree, reserving remaining for another use. Beat in extract. Gradually add confectioners' sugar, beating until smooth.

So good! You will love it. This came out of my latest Paula Deen Mag. I will hopefully remember to post a picture later. I can't post pics on the computer I am on right now.

Yumm...ME! I am going to make this tonight. I saw it in the magazine last week and it looked good. I will let you nkow how it turns out!!!

This cake was good and moist (even though that word is a little gross). Anyhow, to be honest, after about the third or fourth bite it was a little TOO sweet for my taste but it's still good...especially if you like really sweet things.

It is sweet!! and it is very moist (never thought of that as a gross word until now, thanks Dolly:)
This is a keeper to my recipe box, though. Great for spring or summer.
