I am not a huge meat loaf fan, but once in a while I get a taste for it. I found this recipe the other day from Paula Deen and tonight my entire family loved it and said I could make it again! I served it with smashed red potatoes and green beans.
1 lb ground beef
1 1/4 tsp salt
1/4 tsp pepper
1/2 C chopped onion
1/2 C chopped bell pepper (I left this ingredient out)
1 egg, slightly beaten
8 oz. can diced tomatoes with juice
1/2 C quick cooking oats
Topping:
1/3 C ketchup
2 Tbsp brown sugar
1 Tbsp mustard
*Preheat oven to 375 degrees
*Mix all meat loaf ingredients and place in baking dish (I used bread pan). Shape into a loaf.
*Mix ingredients for topping and spread on top of loaf.
*Bake for 1 hour.
