Banoffi Pie

Yummy to my tummy is all I can say about this! I saw the recipe in a Bible study book I've been doing (I know, strange to have a recipe in a Bible Study book, but it was!). I made it for a friend of mine who just had a baby and I will be making it for St. Patrick's Day this week. It sounds hard, but don't be put off by it. It is easy and you'll be glad you made it! P.S. this recipe originated in England at the Hungry Monk Restaurant.

1 1/2 Cups Graham Cracker Crumbs
10 Tablespoons butter, melted
2 14 oz. cans sweetened condensed milk (I used one regular and one fat free and it was fine)
3 Large Bananas, sliced
1 1/2 Cups Heavy Whipping Cream
1/3 Cup Confectioner's Sugar
1 tsp Vanilla
1/2 tsp powdered Instant Coffee
Freshly Ground Coffee or Chocolate Shavings (I used chocolate shavings)

*Preheat oven to 400 degrees

*Mix Graham cracker crumbs with melted butter and press mixture into pie plate. Bake for 5-8 minutes and allow to cool.

*This next step seems like the hardest, but just do it and go do some household chores and before long, it will be done!* Immerse the unopened cans of sweetened condensed milk in a deep pot of boiling water. Cover and boil for 3 hours, making sure the cans remain covered with water. Remove the cans from the water and allow to cool completely before opening. The milk will have turned to toffee.

*Whip the cream with the sugar, vanilla, and instant coffee until thickened and smooth. Spread 1/3 of the toffee over the base of the crust. Lay the sliced bananas on the toffee and spoon another 1/3 of the toffee over the bananas. Layer more bananas and more toffee. Finally, spoon on the cream and lightly sprinkle with the freshly ground coffee or chocolate shavings.

Note: before you boil the cans of sweetened condensed milk, remove the paper wrapping from cans. If you don't, the paper will get stuck to your pan when boiling and it's very hard to remove!!

This is REALLY yummy. Donna made it for us a couple of weeks ago and both my husband and I loved it!
