Frozen Pistachio Dessert

I'm posting this one because Donna told me to. It's an old family favorite. It's cool, so it's a great summertime treat, but the green color makes it a Christmas favorite, too.

50 Ritz Crackers, crushed
1 melted stick of butter
Mix butter and crackers and press into bottom of 9x13 pan. Bake at 350 for 10 minutes.

While the crust bakes and cools, combine:
2 - 3oz packages of instant pistachio pudding
1 1/2 cup of milk

After pudding and milk are mixed, fold in:
1 quart of vanilla ice cream
1 12 oz Cool Whip
and mix well.

After crust has slightly cooled, ,pour pudding/ice cream/Cool Whip mixture over crust and freeze until hardened. Serves well when slightly thawed.

** can also be made fairly WW friendly by omitting the crust (no way to salvage butter and Ritz!) and using low fat ice cream and low fat Cool Whip.
