Tomato Pie

This recipe is sooooo refreshing and perfect for a summertime lunch or brunch! If you like tomatoes, you're sure to love this! For a perfect complimentary side, try this recipe and you will have yourself one fresh and classic southern meal!

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper

Preheat oven to 350 degrees F.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
To serve, cut into slices and serve warm.

HPS, I have tried this before and it is delicious! I LOVE tomatoes and Roy is not a fan of them, so when I made this in the past, it was a dinner for me and I LOVED it! Thanks for posting!!

I know..Max HATES tomatoes too and I tried to trick him and tell him it was "Carpenter's pie" to no avail. No fooling that boy! Roy will LOVE the collards, though. Maybe Tomato pie is a good dish for our next tea or shower!

I have seen tomato pie recipes before but I never knew whether they were good. I will try this one out this week. Thanks for the recipes. This is a great blog!!!
