1 cup Sour Cream
1 1/3 cup sugar
1/2 cup margarine or butter, softened
2 eggs
2 mashed bananas (or 1 1/2 cup)
2 Teaspoons vanilla
2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped nuts (optional)
Vanilla Glaze (blend together)
2 cups powdered sugar
1/4 cup margarine or butter, softened
1 1/2 teaspoon vanilla
2 Tablespoons HOT water
Directions:
Heat oven to 375. Mix sugar, sour cream, margarine and egg in large mixing bowl on low speed for about a minute. Beat in bananas, vanilla on low for about 30 seconds. Beat in flour, salt, baking soda on medium. Stir in nuts (optional).
Spread in greased and floured pan. Bake until light brown (20-25 min). Cool. Frost w/ vanilla glaze. Cut into bars.
