Quick Buttercream Frosting

This is a Williams-Sonoma recipe that I recently tried on a cake. DELICIOUS is all I can say and very easy:) I bought a vanilla bean at the grocery store and added that to the frosting for a little kick and it was very tasty. This is a great frosting for cakes, cupcakes or even sugar cookies!

Quick Buttercream Frosting
4 1/2 Cups confectioners' sugar
12 Tbsp butter, unsalted
3 1/2 Tbsp milk, plus more if needed
1 1/2 tsp. vanilla extract
Pinch of kosher salt

In the bowl of an electric mixer fitted with a flat beater (if you don't have a tabletop mixer, jut use a hand held), combine the confectioners' sugar, butter, the 3 1/2 Tbsp milk, the vanilla and salt and beat on low speed until combined, about 1 minute. Stop the mixer and scrape down the sides of the bowl. Increase the speed to medium and beat until fluffy, about 3 minutes. If the frosting is dry, add more milk, 1 tsp. at a time, until it is creamy but still holds peaks.

(I added the vanilla bean once the frosting was all creamy. Just slit the vanilla bean open with a knife and scoop out the beans and drop them in the frosting).

*This would be great for Valentine's Day cupcakes! Place the frosting in a piping bag with an extra large tip and make swirl toppings on cupcakes! YUMMY!
