Brownie Pie


Whip up a brownie pie from scratch in no time. I love that you stir it all in one pan!

1/2 cup sugar
2 tablespoons butter
2 tablespoons water
1 1/3 cups semi-sweet chocolate chips
2 eggs
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
3/4 cup chopped nuts (optional - I do not use)

Heat oven to 350 degrees. Grease a 9 inch pie plate. In medium saucepan, combine sugar, butter and water. Cook over medium heat, stirring occasionally, just until mixture comes to a boil. Remove from heat. Immediately add chocolate chips; stir until melted. Add eggs; beat with spoon until well blended. Stir in the flour, baking soda and salt. After that is combined stir in vanilla and nuts (if desired) pour into prepared pie plate. Bake 25-30 minutes or until almost set. Note: It only takes 25 mins. in my oven. Pie will not test done in center.

Cool and enjoy. You can also top warm pie with scoops of ice cream, whipped cream and fudge sauce. You can also bake any brownie mix or scratch recipe in mini-muffin pans for gatherings and gift giving.
