Since it's strawberry picking season, I thought I'd share this yummy pie recipe. I love to make this in the summer time and serve it with homemade whipped cream after dinner.
2 1/2 Tablespoons cornstarch
2 Cups cold water
1 1/2 Cup Sugar
1 package strawberry jello
1 quart strawberries
1 9-inch pie shell (baked lightly)
-In a saucepan, mix cornstarch with just enough water to make a paste. Stir in remaining water, sugar and jello. Over medium heat, strirring often, bring to a oil. Then stirring constantly, boil for 5 minutes.
-Remove from heat and let mixture cool completely (45-60 minutes).
-While glaze is cooling, wash berries and remove stems. Pat berries lightly to dry water off. When glaze has cooled, fill pie shell (that has been baked lightly) with berries and pour glaze over top.
-Refrigerate for a few hours before serving.

I made this, but replaced the sugar with Splenda and used a reduced fat graham cracker crust...it is delicious! Fabulous recipe which I will be making again. Never will I purchase Strawberry Glaze at the store again.
