Fresh Apple Cake

This recipe is from my friend and neighbor Cathy. Cathy is the best cook ever! Any and every recipe I've ever made from Cathy is wonderful. Enjoy!!

3 eggs
1 1/2 Cup Oil
2 Cups Sugar

3 Cups Flour
1 teaspoon soda
1 teaspoon cinnamon
1 teaspoon salt

2 teaspoons vanilla
3 Cups peeled and chopped apples
1 Cup chopped nuts - optional

Mix eggs, oil, and sugar. Blend well. Add dry ingredients and blend well. Add vanilla, apples and nuts. Blend. Bake in greased/floured 10" Tube Pan @ 350 degrees for approx. 1 1/4 hours.

Icing
1 Cup Brown Sugar
1/4 Cup Milk
1 Stick Butter

Mix. Boil for 2 minutes. Pour over warm cake. Cool in Pan.

OK, I made it and it was truly amazing. It must be warm though!
