This recipe is my sister, Dolly's. I made it last night, so I thought I'd share. I'm not a big meatball fan, but these are delicious--especially with the melted mozzerella hidden inside each meatball!
1/3 Cup Milk
1 C Bread Crumbs
1 lb. Ground Pork
2 lb. Ground Beef
1/3 Cup minced parsley
2 Eggs, slightly beaten
3 garlic cloves, minced
1 3/4 tsp. salt
1/2 tsp. pepper
1/3 lb. Mozzerella, cut into 1/2 inch squares
2 jars spaghetti sauce
2 lbs. spaghetti
olive oil
-Combine milk and crumbs. Add meat, parsley, eggs, garlic, salt and pepper. Mix with hands and form into 2 inch balls. Press mozzerella cube into center (make sure you can't see the mozzerella).
-Place 1/2 inch of olive oil into frying pan until almost smoking. Add the meatballs and cook until browned, about 1 minute on each side. Transfer onto a paper towel lined plate.
-In a pot, pour in spaghetti sauce and bring to a simmer. Add meatballs and reduce heat to medium-low. Cover and cook for 30 minutes. Uncover and cook for 10 minutes.
-Serve with spaghetti.

Yes, Roy loves this meal. So does picky Caroline. It's even better heated up as lunch the next day.

I have been talking about this since I have been home! I just got on to check if you posted it. I am making it tonight! I don't even like red meat and pork, but it was heavenly the other night!
