BEEFING UP A CAKE MIX

I thought I would share this little tip that I was given over the weekend. I have two friends that make cakes on the side. They always use a boxed cake mix and they are so delicious and good. They add a few extra ingredients to the mix that make it taste more professional and the cake has more body to it.

Molly's Cake Add-ons:

Cake mix
(Do NOT add ingredients on the box)
10 oz. sour cream
1/2 box of instant pudding mix
3 eggs
1/3 c. oil
4-8 T. of water (it is thick so you add enough water to make batter spreadable)
Bake cake at 325 for 35-40 minutes


Carol's Cake Add-ons:
Duncan Hines cake mix
(DO add ingredients listed on box)
Also add one EXTRA egg
1 extra T. of oil
1 entire box of instant pudding mix (small)
Bake as directed.

I made a two-tier cake this weekend and I used both recipes to try them out. They were both delicious and very moist.

I tried the second one using Duncan Hines Pineapple cake and I used coconut instant pudding and topped it off with whipped cream. It was a tropical delight! Very moist and yummy!

I have a question about the second one...do you HAVE to use a Duncan Hines cake mix? We have nut allergies in our home and Duncan Hines is off limits to us. Just wondering. Thanks.
